We started out by simply having a baked potato bar for lunch about once a month, with bacon, broccoli, and cheese as our typical toppings. Then we started trying baked sweet potatoes with toppings, and those were pretty tasty too. And eventually, this recipe was born of wanting to have baked sweet potatoes with toppings (i.e. whatever was in our fridge at the time, which happened to be chicken, bacon, and mushrooms), but not wanting to wait the hour plus for the potatoes to actually … [Read more...]
Whole 30 Results
Our Whole 30 is over. And shockingly, I learned a few things. First things first. I lost 11 pounds, putting me just shy of being under 200 again. Monday Breakfast: Eggs and Potato Vegetable Pancakes (omit flour) Lunch: Chicken Apple Salads with Apple … [Read more...]

In preparing for our Whole 30 challenge, there were some recipes that immediately came to mind that I knew I could make, but with a few modifications. One of those was Sausage Stuffed Zucchini. But when I went to check the ingredients, I couldn't find the recipe. I haven't made it in awhile because my oldest is very adamantly against zucchini. And bananas. He eats everything else, so I don't force those on him too often. I think the original recipe ended with a generous topping of … [Read more...]
