We got a huge zucchini from the Farmers' Market (for only $1.00!) the other day, and I knew I would be making some sort of bread with it. Have I mentioned I love baked goods? But I also wanted to make this a healthier version, while still keeping it yummy. So I lessened the sugar and switched out the melted butter for pumpkin. I also did some wheat flour and some all-purpose flour, and as a result the loaves were a little bit denser than with only all-purpose flour, but still moist and … [Read more...]
Recipe: Polish Sausage Stew
Growing up, this was my "peanut butter sandwich" dinner. Whenever my mom made this, I was allowed to have a peanut butter sandwich instead, because I could not stand it. I'm not sure if this was a rule she instituted beforehand, or if I was just so stubborn about not eating it, but I loved the peanut butter sandwich rule. My kids are young enough that I still make them eat everything once, but I have a feeling before too long, I'll let them pick one meal that is their "peanut butter … [Read more...]
Recipe: Cherry Apple Popsicles
Growing up, one of my favorite parts of summertime was popsicles. I was always a fan of the fudge pops, but I occasionally branched out into other flavors, and cherry is pretty much a classic when it comes to popsicles. Enter the bowl of cherries. These are after I pitted and halved them all. And after Jonah stole about 12 of them. The boy likes his fruits and veggies, at least when Mom is cutting them up. I make sure to do that when he's awake if I can. After cutting and pitting that … [Read more...]
Recipe: Gluten Free Pumpkin Chocolate Chip Muffins
Here's another recipe that I switched from whole wheat flour to oat flour with success! This is quickly becoming another morning favorite for breakfasts and snacking. I don't remember where I got the original recipe, but I think it was from my mom, because these are one of my dad's favorites! First, make your oat flour. You need 3 cups of this (measured before grinding). I've found it easiest to do this 1 cup at a time in my blender, but if you have a fancier blender or use a food … [Read more...]
Recipe: Danish Puff Pastries
When I was younger, my mom would make these Danish Puff Pastries as a special treat. We would see her making them at night around bedtime, smell them baking as we went to bed, and we knew we would get to enjoy them for breakfast the next morning. The ingredients are pretty simple, and not exactly healthy, but these are delicious! This is probably my favorite family recipe, from my Grandma Winter. Crust: 1 cup flour 1/2 cup butter or margarine 2 Tbsp. cold water Mix flour and … [Read more...]
