Simple Chili is my go-to “cooking in a hotel room” recipe. I bring along a couple cans of beans, a couple cans of tomatoes, and some taco seasoning and dump it all in the crockpot. Yes, I travel with my crockpot. Don’t you? But for the at home version, I like to use dry beans because they’re cheaper, and I can add broth for cooking them. Super cheap and super easy!
Simple Chili (2 ways)
Serves 6-8
Option 1
Ingredients (cooked beans):
- 4 cups cooked beans (pinto, kidney, navy), or 2 cans
- 3 14.5oz. cans diced tomatoes, undrained
- 1 batch homemade taco seasoning (see below)
- ½-1lb. ground beef, cooked (optional)
Directions: Add all ingredients to crockpot. Cook on low for 4-5 hours.
Option 2
Ingredients (dry beans):
- 1-½ cups dry beans (pinto, kidney, navy)
- 3 14.5oz. cans diced tomatoes, undrained
- 1 batch homemade taco seasoning (see below)
- 4 cups vegetable broth (make your own!)
- ½-1lb. ground beef, cooked (optional)
Directions: Add all ingredients to crockpot. Cook on high for 8-10 hours.
Taco Seasoning (combine all ingredients):
- 1 tsp. chili powder
- ½ tsp. garlic powder
- ¼ tsp. onion powder
- ½ tsp. oregano
- ½ tsp. paprika
- 1-½ tsp. cumin
- ½ tsp. salt
- ½ tsp. pepper
- ¼ tsp. crushed red pepper flakes
I also use this taco seasoning all the time with ground beef for taco night. Super easy and super yummy!
This chili comes together fast and is made with pantry staples, which means it’s one of my go to meals when we really need to go grocery shopping (anyone else have a couple of those?).
